This holiday season has been so busy, that I had no time to post my planned Christmas menu recipes.... such a shame...! Nevertheless, I am posting the recipes herewith, though a little late for Christmas, but you can certainly use them to create exciting party food to entertain guests, whatever the occasion...!
To treat my friends and family this festive season, I put up a 4 course menu. One key thing....turkey, being the bird of the season, features in each dish...(except the dessert of course). Check it out below'
My friends and family were well fed until they were "fed up"....(Idi Amin humour....hehehe)
Check out the full recipe below. The recipe for the 2nd course; Turkey & Sweetcorn Pepper Soup can be seen here.
What you need:
- Fresh turkey breast
- Suya spice
- Peanut butter
- Ice berg lettuce
- Groundnut oil (or use any oil of choice)
- Cherry tomatoes
- Salad dressing
What to do:
- Slice the turkey breast thinly across the grain.
- Carefully place the sliced turkey on the skewers and place on a tray.
- Sprinkle the suya spice over the skewers ensuring all sides are covered. Allow 1-2 table spoons of peanut butter to dissolve in some groundnut oil.
- Then drizzle all over the turkey skewers. Heat some oil in a griddle pan. Then carefully place the turkey skewers on the hot griddle and allow to cook for about 4 minutes on each side. The depends on the thickness of the turkey.
- Shred the ice-berg lettuce and slice the cherry tomatoes in two.
- Add a little salad cream. Serve skewers with salad.
